Slàinte Mhath!



Haggis is strictly for tourists and suckers. For this Burns Night, we'll be having a slab of prime rib, as usual.

I have spent a few weeks working in Scotland, far off the tourist paths. Back in the late 90's through the late 'aughts'. "Dining" for lunch and supper was in the "local"; breakfast in the salon of your B&B back when they were just an upper room in a home.

Haggis was optionally available at noon and evening meals but you could count on it showing up as "sausage" on every breakfast plate. The local ham and bacon was... well...not to my taste. The haggis was appreciated, especially with a wee dram of the local malt anointing it.

The other common offerings at mid-day and evening?

"Arbroath Smokies", "Bangers and Mash", Ploughman's Lunch, Steak & Kidney Pie

Not bad! But then, my taste has never found prime rib to be all that exceptional, even from the best of chefs.

I humbly submit my meat.
I was recently maimed by an “immersion hand blender situation” resulting from an attempt to make keto chocolate moose - more sober than I’ve been in a coon’s age. Srsly - not a drop.
Long story short I’ve got 13 sutures in my left index finger after a staunch reputation of a bloodless kitchen for > 30years - despite some serious hyjynx. I’m greatly humbled and frankly, in a lot of pain.
I’ve been telling inquirers I’ve been attacked by a goose, for personal reasons.

Believe me, I was thinking of you the entire time. And all you other preppers, of course.
But seriously, it was humbling. I’m the one who usually takes care of everyone here so - No one here was remotely capable of doing so. This one was beyond me. Heed Aesop.
I went beyond the pale, alone, and it SUCKED.
I want to urgent care. After their assurance and poor assessment and considerable waste of time, ended up in the ER.
I waited for 2 hours with a profusely bleeding laceration, in considerable pain (seriously) for WAY too long.
13 sitches later… I could NOT do myself. Not even close.

Hosted our 2nd annual Burns Supper at the country club I manage. One of our Members is from Corstorphine and his wife from Derry; they do some of the speeches. We served Cullen Skink, Haggis/Neeps/Tatties, Prime Rib and a Tablet Cheesecake. Prior to dinner, I held a Whisky Tasting with 7 Single Malts from all the Whisky Regions.
Sadly, I was the only person to wear a kilt.

All this to say it was a great time and one should attend a supper given the chance……and I like Haggis. My wee daughter ate it nearly everyday for breakfast whilst in Edinburgh last July. I’m again taking 11 club members to Scotland and Ireland in April for 14 days/13 rounds and will enjoy the breakfast haggis again!
